This is my fool proof, go to banana bread recipe. It is moist and absolutely delicious.

The perfect way to use up those over ripe bananas! Such a versatile bread. you can enjoy it for breakfast, snack time or they are perfect for a picnic! They make lovely gifts if you pack them. I decorated them with edible flowers and a couple of fondant butterflies to make it look extra pretty. The best part, your home will smell divine!

Equipment
- 1 9 x 5 loaf pan (or 4 individual smaller ones)
- Parchment Paper
Ingredients
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup oil
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 4 very ripe bananas
- 1/2 cup chopped walnuts
- some butter for greasing pans
- edible flowers such as pansies for decoration optional
Instructions
- Preheat oven to 350 F
- grease your pans with butter, dust them with flour and line the bottom with parchment paper
- Sift your dry ingredients, flour, baking soda, baking powder, cinnamon and salt and set aside
- mix the oil and sugars till nicely combined
- slightly beat the eggs and add to mixture
- add vanilla, sour cream and mix
- mash bananas with a fork and add them to the mixture
- scrape down the sides of the bowl when needed
- add your dry ingredients and mix
- stir in the chopped walnuts
- transfer mixture to pan and bake till a tester inserted in the middle comes out clean
- If using one big pan it will take about 45- 50 mins If using smaller individual ones it will take around 30 mins
- take out of pan and cool on a wire rack
- decorate with edible flowers
- If you pack them they make perfect gifts
