Pumpkin Cheesecake Brownies (Halloween Themed)
They are soft, fudgy, yummy and perfect for this fall season. The swirly googly eyed presentation also makes it the perfect Halloween treat! So lets get baking!

Equipment
- 8 x 8 Inch square pan
- Parchment Paper
Ingredients
Brownies
- 4 Oz bittersweet chocolate (113 g)
- 4 oz unsalted butter (113 grams or 8 Tbsp)
- 1 cup all purpose flour
- 1/2 cup cocoa powder (unsweetened Dutch processed)
- 1/4 tsp salt
- 4 eggs
- 1 tsp vanilla extract
- 1 cup sugar
- 1/2 cup light brown sugar
Pumpkin cheesecake
- 8 Oz cream cheese softened at room temperature (225 g)
- 1/2 cup sugar (100 g)
- 1/2 tsp vanilla extract
- 1 egg
- 2/3 cup pumpkin puree
- 1/2 tsp cinnamon
- 1/4 tsp all spice
- 1/4 tsp ground ginger
- 1/8 tsp nutmeg (freshly grated if possible)
- 1/4 tsp salt
- 1/4 cup flour
- orange food color (optional)
- Edible Googly eyes if making Halloween themed
Instructions
- Butter the pan, line with parchment paper and set aside
- Preheat oven to 350 F
Brownies
- Melt the butter and chocolate in 30 sec bursts in microwave, stir and let it cool
- Sift the dry ingredients, flour, cocoa powder and salt and set aside
- Beat the eggs, vanilla and sugar till lighter in color and fluffy
- Add the melted butter and chocolate and mix
- Add the dry ingredients and mix
- Reserve 1/4 cup of the batter and pour the rest into the pan and smooth out the top
Pumpkin cheesecake
- Beat the cream cheese, vanilla and sugar till nice and fluffy
- Add the egg and mix
- Reserve just 2 Tbsps of this white cheesecake mix for swirling later (optional)
- Add pumpkin puree and spices, cinnamon, all spice, ginger, nutmeg and salt
- Mix till combined
- Add the 1/4 cup flour and mix
- Add a few drops of orange food color and mix
- Pour this batter into the pan over the brownie batter and smooth out
- Add spoons of the reserved brownie and white cheesecake batter on top and swirl with a toothpick or skewer
- Bake for about 35 mins, may take a bit longer but do not over bake!! to check a skewer inserted in the middle should be fairly clean, remember it keeps cooking after you take it out with residual heat
- Let it cool in the pan
- Remove from pan and cut with a sharp knife dipped in hot water and wiped with a paper towel
- Add googly eyes if Halloween themed. Attach with icing or just water or water mixed with a bit of icing sugar
