Popsicles are the perfect summer treat! These could not be easier to make and they are so pretty. The only hard part is waiting for them to freeze so you can eat them!

Popsicles are the perfect summer treat ! These could not be easier to make and they are so pretty. The only hard part is waiting for them to freeze so you can eat them!

Equipment
- Popsicle mold (I use a flexible silicone mold, popsicle size 3 1/2 inches x 2inches, 1 inch deep)
- Popsicle sticks
- Food Processor or Blender to Puree fruit (if making popsicle 3)
Ingredients
Popsicle 1 (makes 4)
- 1 cup coconut water
- Edible flowers
Popsicle 2
- 1 cup lemonade (store bought or home made)
- 4 strawberries or 1 kiwi (sliced fruit of your choice)
- mint leaves
Popsicle 3
- 2 cups mango chunks
- Pink fondant (optional for decoration)
Popsicle 4
- 1 cup whole milk vanilla yoghurt (add 1 tsp vanilla extract if you have plain yoghurt)
- 1/2 cup frozen mixed berries
- 1 Tbsp maple syrup
- Yellow fondant (optional for decoration)
Instructions
Popsicle 1
- Add edible flowers to mold, add sticks and pour in coconut water and freeze for at least 4 hours
Popsicle 2
- Slice fruit, arrange in mold with mint leaves. Pour in lemonade and freeze
Popsicle 3
- Roll out fondant and cut out circles with a cutter to make pink polka dots
- arrange them on the bottom of the mold
- puree the fruit and add on top of the polka dots
- press it in, smooth the top and freeze
Popsicle 4
- Cut out butterflies or bees out of yellow fondant for decorations later
- Puree the berries
- Mix Maple syrup and yoghurt
- Mix in the berries into the yoghurt, not all the way so it makes a swirly design
- Add to molds and freeze for 4 to 6 hours
- Once ready add fondant butterflies and bees to make it look pretty. They will naturally stick to the wet popsicle
