
Pina Colada Chia Pudding

These Pina colada inspired chia puddings are refreshing and yummy. Since they are dairy free and refined sugar free they are also healthy (ish) and guilt free! They are perfect for breakfast, dessert or a snack.
Pina Colada Chia Pudding
I dressed them up as flamingos because why not?! haha
If you can't get to a beach, these will bring the beach to you!

Equipment
- mason jars or glasses for serving
- If making flamingoes, 2 scrunchies and a paper neck and face
Ingredients
- 1/2 cup coconut milk
- 2 Tbsp chia seeds
- 1/2 cup fresh pureed pineapple
- 1/4 cup sliced almonds
- 1/4 cup shredded toasted coconut (5 mins at 350 F on a baking tray)
Instructions
- Mix the coconut milk and chia seeds, set aside for 15 mins, it will start to thicken
- start your layering in individual serving glass or jar.
- chia pudding first, pineapple, almonds, coconut and repeat!
- chill in the fridge for 2 hours at least. overnight is best
