This is an easy and simple recipe for carrot halwa or Gajar Ka Halwa as its called in Pakistan. Also a unique and beautiful way to present your halwa!

It saves a lot of time if you shred the carrots in a food processer. It takes some time to dry the milk up but its well worth it.
I ate so much of this growing up specially in the winter time. Whenever I make this deep orange Dessert It makes me nostalgic.

Ingredients
- 500 g carrots shredded
- 4 cups/ 1 liter whole milk
- 1/2 cup ghee or vegetable oil
- 1 cup sugar
- 1/2 tsp ground cardamom
- chopped almonds or pistachios to decorate
- cookie cutters for presentation idea (optional)
Instructions
- Shred the Carrots and add to milk
- Boil the mixture and let it simmer till the milk dries up, stirring occasionally
- This step can take over 30 mins
- After the milk is almost dry and the cardamom, ghee and sugar and fry till it turns golden deep orange. It will come together and start separating from the fat.
- To Decorate, flatten the halwa on a flat surface and cut out petal shapes with a cookie cutter or knife
- arrange them on your platter and decorate with nuts and cardamom

Some helpful tips:
Once the milk starts to dry keep stirring so it does not get stuck to the pan or burn
