
Caramel Custard in the Instant Pot

This dessert has so many names! Caramel custard, Creme Caramel, Caramel pudding, flan. But whatever you want to call it, it is the simplest yet yummiest dessert ever!

This caramel custard is made in the instant pot. The biggest advantage of that is it is a time saver! This pudding is made in the instant pot. The biggest advantage of that is it is a time saver! This caramel custard recipe was my grandma's favorite. So much so that I would wonder will she leave any dessert for the kids?!! I have never seen anyone enjoy desserts as much as she did!

Equipment
- Instant pot
- Trivet
- 6 inch cake pan
- Sieve
- 6 inch domed pan
- 4 inch domed pan
Ingredients
Caramel
- 1/2 cup sugar
- 1/4 cup water
Custard
- 2 cups milk
- 1/2 cup sugar
- 1 tsp vanilla extract
- 4 eggs
- Fondant in light brown (red and black for decoration)
- If making teddy bear, I used half the recipe in the second, smaller pan
Instructions
- Make caramel. Put the sugar and water in a heavy bottomed saucepan and heat up
- brush the sides of the pan with water using a pastry brush
- do not stir, when it turns a golden amber color its done
- Pour it in your pan
- start the custard, heat the milk, vanilla and sugar a bit
- beat the eggs and gradually add them to the milk
- strain the mixture
- pour into pan, do not overfill
- cover tightly with foil
- fill instant pot with 2 cups of almost boiling water
- Put pan on a trivet and lower it in
- select steam, low pressure for 12 minutes and let it release naturally for 10 mins
- cool at room temperature and chill for at least 4 hours
- loosen sides with a knife and turn over a serving dish
- Roll out the brown fondant and cut an oval shape for the mouth
- make balls out of the black fondant, 2 eyes and a bigger nose
- make the ears, by cutting 2 round circles
- cut out a heart with the red fondant
- make the hands with the brown fondant

Notes
Some helpful tips:
Add the fondant decorations right before serving other wise the color will start to bleed because of the caramel
serving dish should have a bit of depth to catch the caramel
